
The company has been modernised over the past 10 years with the acquisition of new equipment, but without forgetting the old traditions, such as that of migratory herding, practiced on the Terminillo Mountain, home of the Leonessano cheese, a mountain cheese particularly appreciated for its flavour. The company has approximately 2,000 sheep that are milked for own production and for external sale. The company processes the milk into variously aged Pecorino cheeses and an excellent “Primo Sale”. But what we recommend is an outing to the Terminillo Mountain on the 3rd August for the Transhumance Feast, when delicious warm ricotta is offered to people attending. The distribution is done through specialised stores, particularly in the Sabina area.
